Today’s recipe was posted last week at Amy’s Humble Musings. All you have to do is say two words to get me to try a recipe…crockpot and easy.
Ingredients
4-5 lbs. of boneless, skinless chicken or pork loin can be substituted
Olive Oil
Fresh Garlic cloves
salt and pepper
1 cup water
Onion (optional)
Lime juice
Goyo’s Adobo seasoning
3-4 tsp. Chicken bouillon
Directions
In morning, prepare boullion and add to crockpot with meat, onion, water. Salt and pepper to taste. Cook on high.
An hour before dinnertime, drain off liquid and separate meat with a fork. Pour on olive oil until moist. Add garlic chopped cloves to taste and light amount of Adobe seasoning to taste. Leave in crockpot an hour.
Amy suggests seving with black beans, rice and sour cream (and lime juice). I don’t think Bump will go for anything but the rice. We’ll see what the big people think of the rest.
Results to be posted later…..by the way, I’m halfing this recipe for my not so big family.
Update: This turned out fantastic. I just served with rice and veggies…I made my famous black bean soup on Friday and am still in recovery from the beans. The meat had a wonderful flavor and you could serve it with anything. I think it would be great on pasta with any sauce. Gil hasn’t tasted it yet. He won’t get it until tomorrow night’s lunch….oh well. I will definately make this one again.
