Yesterday, I made the most divine recipe. I’m sure that everyone on the planet has done this one, because I’ve seen it in about 4 places without looking for it. But I thought I’d share anyway.
Cranberry Chicken -
You need
Chicken breasts ( I used 3 fat ones filleted in half)
French Dressing (8 oz)
Can of Cranberries (15 oz)
French Onion Soup Mix
What you do
Mix 8 oz of French Dressing, cranberries and Onion Soup Mix. I’ve made this a few times, and about 1/4 of an envelope is about right for us. Don’t really need to use it at all. I like cranberries with cranberries rather than the jellied, but the choice is yours!
Now, depending on what you do with it, is part of the next step. You can:
1) Cook it in the crock pot
2) Bake it in the oven
3) Dump it in a plastic freezer bag and put it in your freezer
If cooking in the crock pot - you can actually mix ingredients in crock pot and then add in chicken, stirring it into the sauce. Cook on high for 4 hours or low all day.
If baking - spray baking dish. Put breasts in bottom and pour sauce over the top. Bake at 350 for about an hour.
If freezing - Put chicken in freezer bag and pour sauce on top. Defrost before cooking and bake as above or cook in crock pot.
I’ve now done it all three ways. I like the crock pot option. The sauce is spectacular over rice. Broccoli is a great side, too.
